Ube Pancakes [Take 1]

First attempt at making ube pancakes! Made them for a homemade Filipino brunch I had with some friends. 🙂 I made my pancakes using two recipes, as I couldn’t find a recipe that worked with the ingredients I already had. I used this ube pancake recipe, but it called for pancake mix which I didn’t want to buy since I don’t make pancakes for myself often…or at all. So I found a pancakes recipe and used it to make my own pancake mix. They turned out so delicious! My friend said they were so good she could eat them without syrup. At our brunch we also had roasted pork adobo, fried eggs, garlic fried rice, and mimosas made with orange mango juice.

Ingredients Used:

  • 1 cup ube halaya (jam)
  • 1/3 cup coconut milk
  • 1/4 cup water
  • 2 teaspoon sugar (I used erythritol as a calorie-free sugar substitute)
  • 1 egg
  • 2 tablespoon butter, melted
  • 1 cup flour
  • 2 teaspoon baking soda
  • 1/2 teaspoon salt
  • butter and maple syrup, to serve



Notes for Next Time:

  • Add a bit of ube extract to pancake batter to make the pancakes purple!
