Buko Pandan [Take 1]

Buko Pandan with a twist—Sprite! This is one of my all time favorite Filipino desserts that I would only see at parties. I was craving it so I decided to make it for our family New Years party tonight. Thank God I know how to make it myself now. 🤤💚 In my recipe I used shredded young coconut, green agar jelly, mini tapioca pearls, pandan extract, condensed milk, evaporated milk, and, as I mentioned, Sprite to cut the creaminess and add another dimension of flavor.

Ingredients Used:

  • 2 bags of shredded young coconut (I accidentally got one bag of shredded young coconut and one bag of shredded coconut…oops)
  • 1 can condensed milk
  • 1 can evaporated milk
  • 2/3 cup mini tapioca pearls
  • 1 tsp pandan extract

Green Agar Jelly

  • 1 packet of green agar powder
  • 1/2 cup erythritol or sugar (I used erythritol as a calorie-free sugar substitute)
  • 17 oz organic coconut water
  • 13 oz water



Notes for Next Time:

  • Make sure I get two bags of shredded YOUNG coconut, lol
  • Try using heavy/whipping cream instead of Sprite for a creamier taste
